There's an exciting, relatively new sweetener on the block. Its name comes from the Greek word for 'admirable' and besides it being the key ingredient used to make tequila, it provides us with a superior natural alternative to white table sugar.
It is AGAVE and, for several reasons, it's gaining in popularity.
The original people of Mexico discovered the many uses of the Blue Weber Tequilana. It's most famous use was in the making of fine tequila.
Lately however, the exceptional sweetness of the nectar of the Blue Weber has come to be recognized; and the syrup's high fructose level makes Agave Nectar an excellent choice for diabetics and other discerning consumers.
There are about 140 species of agave in Mexico, of which the blue agave is the only one allowed for use in tequila production and produces a premium grade nectar. (Several different species of agave are allowed in the production of Mescal, an alcohol similar to tequila, and to produce a standard grade of nectar.)
Mani's uses a certified organic Premium Agave Nectar naturally extracted from the pineapple-shaped core of the Blue Weber Tequilana Agave, a succulent native to Mexico.
Our Premium Agave Nectar is produced from 100% Blue Weber Tequilana plants that are Not Genetically Modified (Engineered).
The Glycemic Index for the Premium grade has been measured at 10-11. This GI, certified by the University of Sydney, is based on Agave Nectar produced from 100% Blue Weber Tequiliana. Agave Nectar produced from a blend of Agave plants or "Wild Agave" has a higher Glycemic Index. Do not be confused!
Our Premium Agave Nectar is kosher, Parve, Vegan, and it is at least 25% sweeter than sugar so we can use less and save on calories.
Our Pecan pie, sweetened with agave nectar, rivals any traditional southern recipe calling for sugar and corn syrup. Once, a couple visiting from Austin Texas were amazed that our healthier version of their favorite Texas classic was better tasting.
If you are looking for a great unusual scone should really try our Raisin Scone! Not to be confused with our wonderful Raisin Barley Scone, the Raisin scone is triangular in shape and it's Gluten Free! It's perfect with coffee or tea, or as an in-between snack while on the go.
An alternative to our popular Vegan Carrot Raisin cake is our Caramelized Apple cake. It's a four layer apple-spice cake, filled with a rich vegan cream cheese frosting, topped with a layer of thinly sliced apples in a beautiful caramelized apple sauce glaze. It's sweetened with date sugar and agave syrup and it's even wheat free!
If you're curious about its effectiveness as a sweetener, we urge you to come in and taste a sample of one of our agave sweetened bakery goodies. We're sure you'll be glad you did!
